Easy Mushroom Turkey Stew Recipe

“This diabetes friendly recipe is a deliciously spicy, chunky stew. My husband loves this during the fall and winter with nice thick slices of fresh Italian bread. Goes over really well with snow mobilers, and skiers.

Original Recipe Yield 10 servings

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground turkey
  • garlic powder to taste
  • Italian seasoning to taste
  • ground black pepper to taste
  • 2 (28 ounce) cans no-salt-added crushed tomatoes, with liquid
  • 1 (28 ounce) can no-salt-added whole tomatoes, with liquid
  • 1 (15 ounce) can kidney beans
  • 1/2 cup hot pepper sauce
  • 1 large green bell pepper, chopped
  • 1 large onion, chopped
  • 1 pound fresh mushrooms, chopped

Directions

  1. Heat the oil in a skillet over medium heat, and cook the turkey until evenly browned. Season with garlic powder, Italian seasoning, and pepper. Drain, and transfer turkey to a large pot.
  2. Mix the crushed tomatoes with liquid, whole tomatoes with liquid, kidney beans, and hot sauce into the pot. Stir in the green bell pepper, onion, and mushrooms. Bring the mixture to a boil, reduce heat to low, and season to taste with garlic powder, Italian seasoning, and pepper. Continue cooking 1 hour, stirring occasionally, or to desired consistency. If the stew is too thick, mix in some water.

Black Bean Dip Recipe For Diabetics

1 Jar of (16 ounces) Salsa
1 can (15 1/2 ounces) of black beans rinsed and drained
1 teaspoon of garlic powder
1 teaspoon of dried cilantro

In your blender or food processor, combine the beans, salsa, garlic powder, and cilantro.
Process the mixture until chopped, and serve with your favorite tortilla chips.

Butterscotch Cookies For Diabetics

1/2 tsp. baking powder
1 c. flour
Pinch of salt
1/4 c. shortening
2 tbsp. brown sugar
1 env. or 1 1/16 oz. artificially sweetened butterscotch pudding and pie filling mix
1/4 tsp. vanilla
1 egg

Start by Sifting together the salt, flour, and baking powder. Then combine the shortening, sugar and cream together and slowly add pudding mix, and mix  together thoroughly. Next add egg, and beat until the mixture is light and fluffy. Stir in your vanilla, then add ingredients; mixing it well. Place the dough on wax paper and shape into a roll around 2 inches in diameter.

Wrap in dough in wax paper. Place in the freezer for around 30 minutes or just refrigerate overnight. Cut the cooled dough into 1/8 inch slices then place it on an ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes.

2 cookies = 2 fruit and 1 fat exchange.

Makes 24 cookies.

It is not easy living with diabetes. It is a good idea to make changes on how you live your life. It is not hard to manage your diabetes if you know how to monitor your own blood glucose levels. You will be able to live your life more normal  in spite of the fact you are suffering from being a diabetic.

You need to remember that when you get diabetes you will have it for the rest of your life. There are no known cures for the disease but you can manage it by being able to monitor your blood glucose levels.

Blood glucose levels are monitored by a glucometer or a glucose meter. The device will let you know the amount of glucose in your blood. You need to produce a small amount of blood so the machine can read it. Lancets and a lancing device are included in most glucose meter kits.

  • First off  put new lancet into your lancing device. Next take a test strip from the bottle  then replace the cap. Insert the test strip into your glucose meter so it is ready to use. It is important to was your hands and apply disinfecting alcohol to disinfect your hands. Make sure you dry your hands or you could get wrong results.
  • Prick your finger with your lancing device so the blood flows take the recommended amount of blood and place it on test strip. Most of the devices automatically reads your blood glucose levels and will produce results in a few seconds. Then take disinfected cotton and press on the area that you drew the blood.
  • Discard the test strip along with the used lancet. Be sure to record the results in your log book so you can effectively monitor your blood glucose levels during the day. This information will assist you in preparing meals in addition to knowing the right kind of activities you should or should not do.

    Diabetes is a serious disease with lots of complications if it is managed improperly.

Diabetes Brownie Dessert

1 c. cake flour
1/2 tsp. salt
1 tsp. baking powder
2 tbsp. cocoa
1 oz. melted chocolate
1/2 c. skim milk
1/4 c. vegetable shortening
3 eggs
1/2 c. sugar substitute
1/2 c. nuts, ground or slivered

Sift together the first 3 ingredients. Pour the melted chocolate over shortening and blend the mixture well. Beat the eggs until it’sthick and lemon colored. Add the sugar substitute; add chocolate mixture and part of the dry ingredients. Beat and add remaining dry mixture, alternately with the milk. Fold in nuts. Spread in 2 (8 inch) greased and paper lined pans. Bake at 325 degrees for 17 to 20 minutes. Makes 64 (1 x 2 inch) bars.

Date Cookies

1 c. raisins
1/2 c. chopped dates
1 c. water
2 eggs
1/4 c. margarine
1 tbsp. liquid sugar substitute
1 tsp. vanilla
1/4 tsp. cinnamon
1 c. flour
1 tsp. baking soda

Combine in saucepan the raisins, dates, and water. Boil 3 minutes; stir constantly. Cool. Cream together eggs, margarine, liquid sugar substitute, and vanilla. Sift together cinnamon, flour, and soda. Add dry ingredients to the creamed mixture. Beat well and chill for several hours. Drop from teaspoon onto greased baking sheet. Bake at 350 degrees for 10 to 12 minutes.

Yields: 48 (2 inch) cookies.
